Who I am...

I'm a culinary school grad that spent 15 years in the restaurant industry as a line cook, sous chef and executive chef. Now I write recipes, take pictures of 'em, shoot some video, occasionally hosting on TV, checking out the latest fashion, hangin with my wife and daughter and watching a whole bunch of college sports. Hope you enjoy my twists on classics as well as new innovations!

 

What I do...

I am classically trained culinary school graduate with over 15 years in the restaurant industry. I’ve adapted my cooking style from super elegant and fine dining to a concentrated effort around the home cook enthusiast. There are no gimmicks or no shortcuts in my kitchen. Sure, some things prepare quicker than others, but you won’t find the 30 minute meal fix on the reg on BillyParisi.com. I’m going to show you how to properly cook things with a fundamental basis in classic French and Italian cooking techniques. I rarely put things in the microwave and sometimes it’ll take me up to 18 hours to smoke a brisket or overnight to let bread rise, so if you are looking for the quick fix this may not be for you. However, if you just enjoy really good food, great photography and food videos then you’ve come to the right place, whether or not you seek to prepare any of my recipes.
